Book Synopsis

This book contains perspectives on the role of functional foods in the prevention of various human diseases, and this first volume of two focuses on the role fruit, vegetables, and teas play in prevention. The book contains the latest scientific research and the impact of this research on policy and regulation of functional foods.

Booknews

The first of two volumes emerging from an April 1997 symposium in San Francisco, the other covering medicinal plants and other foods. After overviews, the 23 papers cover foods in the three groups that, along with related compounds, are used to fight cancer, aging, and other conditions. Among specific discussions are the prevention of cancer, carotenoids as a promising factor for functional foods, anti-fatigue effects of yiegin, and tea catechin and its metabolites as bioantioxidants.
