It's vital to our health that we find ways to reduce our daily calorific intake, but at the same time, it is equally important that we continue to enjoy the food we eat. Food is not just about health, and it's not about excluding any particular food groups or ingredients. It's all about balance. And all of us should get to enjoy a bit of sweetness now and again, after dinner or as a snack. By replacing with Splenda some, if not most, of the sugar you add to your food, you can reduce the calorie intake of your family. I started using Splenda sweetener myself when I found out I was heading towards diabetes. My resistance to insulin, a hormone that helps the body to process sugar and use it as fuel, was so high that I was at risk of developing diabetes. I had to take drastic steps to reduce my weight. But, as a chef, I want to cook my family the food that they love to eat. By using Splenda sweetener, I have managed to do both--reduce the amount of sugar I eat while still cooking delicious things.
The recipes in this book are full of sweet things and use Splenda sweetener rather than sugar where possible. This doesn't mean there's no sugar in them at all--I've still used ingredients that contain natural sugars such as fruit, and some of the baking recipes need a little bit of sugar, honey, or syrup to make them work.
