I have been a fan of the Cooking Light magazine for over 10 years and this cookbook is one of my favorites and probably my current most used book on my cookbook shelf (which numbers over 80 cookbooks). I was looking to add more vegetarian meals to my family's diet and this is one of the many books I purchased. Here's what I love about it:

1. Photos - This book is filled with photos. I love that - food is so visual. Most recipes have a photo of the finished dish plus special "Kitchen How-To" photos which demonstrate techniques such as the step-by-step process of cooking and assembling a frittata or the step-by-step photos of sautéing tofu cubes for a nice caramelized flavor.

2. Ease of Recipe - The recipes in this book are easy to make. The instructions are clear and the steps are straightforward. Most recipes have only 3-5 steps; these are not fussy or time-consuming meals to make. The addition of the step-by-step technique photos for most dishes makes cooking the recipes fun and stress-free. No need to guess whether you are twisting your breadsticks properly, just follow the photos!

3. Common Ingredients - I hate having to search all over town for an uncommon ingredient which may or may not make a difference to the finished dish. This book doesn't use hard to find ingredients. If you are new to vegetarianism, then some of the food listed may be new to you (such as Tempeh or Seitan) but actually can be found in your local supermarket.

4. Nutritional Information - Maybe not important to everyone but I look for this. Each recipe contains detailed nutritional information such as calories, total fat, saturated fat, monounsaturated fat, polyunsaturated fat, protein, carbohydrates, fiber, cholesterol, iron, sodium and calcium.

5. Food that Tastes Great - Of course the recipes have to work and these deliver. The recipes I've tried produce wonderful, fresh tasting food which I have made again and again! This book has a great variety of vegetarian options for whatever your mood.

There are a few things that could be improved (but don't take away from my 5 stars). Like other reviewers, I did find the odd mistake in several recipes. However, unless you really know NOTHING about cooking, I don't think these would take away from your use/enjoyment of this cookbook. I'd also prefer if the binding wasn't hardcover but was spiral bound or a binder so it would lie open on my counter.

Bottom-line: I highly recommend this book to anyone who is interested in adding some healthy vegetarian meals to their diet - definitely try the recipes for Polenta with Olives, Tomatoes & Feta, the Peanut Crusted Tofu Triangles, or the Chipotle Bean Burritos. Of the 20 or so books I've purchased looking for great vegetarian meals, this is my go-to book.

First of all, this cookbook is absolutely beautiful. It includes high-quality pictures of every recipe and very detailed instructions as well as photos of many of the steps necessary to complete a recipe. I am not a vegetarian, per se - but I did want to eat more vegetarian meals each week and was having trouble figuring out what to cook...especially for a meat-loving husband. The book is wonderful for even a beginner vegetarian! Recipes are easy to follow and really take the fear out of using vegetarian ingredients most carnivores are not familiar with. They also include reasons why certain ingredients are used and what they add nutritionally to a healthy vegetarian diet. Nutrition info is also available on each recipe. Everything I have tried so far is absolutely delicious and even my husband is excited to try more of them! I have always trusted Cooking Light and this book does not disappoint!

A great source with tons of pictures and recipe's. Lots of variety and more simple ingredients than other books I've tried. I've had great success with the recipe's I've tried and are easily adaptable to fit the whole family. We are not a truly vegetarian family, but trying to cut out as much meat and processed food as possible. I am finding the vegetarian cookbooks to be better recipe's and it's easier to add a little meat then to take it out.

I loved this cookbook. I need visuals and the pictures in this cookbook were really helpful. This cookbook not only contains great recipes but also gives clear step by step instructions on how to prepare the wide variety of vegetarian choices that are out there to feast on. You don't have to be a Vegetarian to own this cookbook. If you're just trying to prepare a few more meatless meals for your family, this just may be the cookbook for you.

I really like this cookbook. I have a few Cooking Light cookbooks in my collection and this is my favorite. It is a lovely book with pictures galore of the recipes and lots of general info regarding the more unusual ingredients of vegetarian cooking. There are lots of options and adaptations for the vegan cook, as well. The recipes are straightforward, not too exotic or using hard-to-find ingredients. Good for the those just beginning to eat this way, but also useful for more experienced vegetarians/vegans who just want to make food that doesn't require jumping through hoops to cook it. The recipes are also low-fat, which is what motivated my purchase of the book. I have made a few recipes in it and they have all turned out well. The recipes are pretty flexible so you can adapt them to your personal taste. Nice book!

Not much variety. More informational. Would have like more recipes that were all inclusive (casserole like) rather than by type of food (grain, pasta, etc.)

I LOVE this cookbook. It has sooo many "go to" recipes, I want to laminate each page, so don't ruin it.
I have prepared several recipes, and each is now a staple in my meal planning. So many recipes I still want to try, and since they are fairly easy....I know I will get to them all. Who knew cooking could be fun? I definitely feel I am eating healthier!
Carnivores will enjoy these recipes too! I planned a full week of meals, solely from this cookbook, and my meat and potatoes husband devoured every meal.

I am not a vegetarian, but I still love to cook some vegetarian meals here and there. It's a great way to get more veggies and legumes into my diet.

I don't think I've ever met a Cooking Light book I didn't like, and I've enjoyed nearly all the CL recipes I've made. This book is no exception. The recipes are well-explained, attractively presented, and tasty.
